The intensification of modern animal husbandry inevitably leads to increased stress load on animals, which negatively affects their productivity and product quality. Existing methods for assessing stress status using biological fluids (blood, saliva) have a significant drawback - they reflect only short-term hormonal fluctuations. In this regard, the search for reliable integral indicators of chronic stress becomes particularly relevant, among which the determination of adrenaline concentration in hair appears promising.</p> <p>Purpose. To study the effect of adrenaline levels assessed in hair on meat productivity, meat quality and mineral metabolism in Aberdeen Angus bulls.</p> <p>Materials and methods. The study was performed on 50 Aberdeen Angus bulls. Adrenaline concentration was determined by enzyme immunoassay in hair samples collected from the animals’ withers. Based on the data obtained, three experimental groups were formed by the percentile method: I - with low (1.24-1.55 ng/ml), II - with moderate (1.58-2.69 ng/ml) and III - with high (2.76-3.14 ng/ml) hormone levels. After control slaughter, a comprehensive assessment of slaughter indicators, morphological composition of carcasses, chemical analysis and determination of the mineral profile of the longissimus dorsi muscle was performed. Statistical data processing was performed using the Statistica 10.0 software package.</p> <p>Results. It was found that elevated adrenaline levels were associated with a decrease in hot carcass weight by 5.8% and slaughter weight by 6.0%. With deterioration of beef quality characteristics: intramuscular fat content decreased by 18%, energy value by 11%, calcium concentration by 22%, potassium by 31%, zinc by 18%, selenium by 28%.</p> <p>Adrenaline concentration in hair can serve as a representative biomarker of chronic stress that significantly affects productivity and meat quality characteristics.</p>
<trans-abstract xml:lang="ru"><p>Обоснование. При ухудшении качественных характеристик говядины: содержание внутримышечного жира снижалось на 18%, энергетическая ценность - на 11%, концент<ext-link/>рация кальция - на 22%, калия - на 31%, цинка - на 18%, селена - на 28%.</p> <p>Концентрация адреналина в волосе может служить репрезентативным биомаркером хронического стресса, оказывающего существенное влияние на продуктивность и качественные характеристики мяса.</p></trans-abstract><kwd-group xml:lang="ru"><kwd>мясное скотоводство</kwd><kwd>бычки</kwd><kwd>откорм</kwd><kwd>мясная продуктивность</kwd><kwd>волос</kwd><kwd>гормоны</kwd><kwd>стресс</kwd><kwd>адреналин</kwd></kwd-group><kwd-group xml:lang="en"><kwd>beef cattle farming</kwd><kwd>bulls</kwd><kwd>fattening</kwd><kwd>meat productivity</kwd><kwd>hair</kwd><kwd>hormones</kwd><kwd>stress</kwd><kwd>adrenaline</kwd></kwd-group><funding-group/></article-meta></front><body></body><back><ref-list><ref id="B1"><label>1.</label><mixed-citation>Калашников, А.
